The origins of Valpolicella DOC

Today we talk about a typical wine of the beautiful city of Verona: the Valpolicella DOC.

According to tradition, the name originates from the Latin word "Vallis polis cellae", meaning "valley with many cellars", which testifies to the ancient wine-growing culture of the Roman period.

Valpolicella wine comes from a blend of different grape varieties, of which the main ones are Corvina Veronese, Rondinella and Molinara.

Produced in 19 municipalities in the north of Verona, it changes its name depending on the place of production: Valpolicella Classico if it comes from the areas of Negrar, Marano, Fumane, Sant'Ambrogio and San Pietro di Cariano; Valpolicella Valpantena if produced in the specific Veronese valley.

The fresh grapes, from which this fine wine derives, are harvested following a careful selection - in the vineyard - of the bunches destined for the drying phase for the production of Amarone and Recioto.

The refinement - or the aging in the bottle - takes place in a short time, just like its fermentation.

Valpolicella is a light, ruby-red wine with an alcohol content between 12 and 13 degrees. Pleasant and almost almond on the nose, it has a velvety and dry taste.
It is really excellent within two or three years of bottling and consumption is recommended within 5.

The types of Valpolicella DOC

Characterized by a dry taste and a scent of vanilla, Valpolicella Superiore requires a consumption gradation above 12 degrees.

The Valpolicella Ripasso, however, is enriched by a second fermentation (about a week) through contact with the marc of Recioto or Amarone, which gives this second type of Valpolicella a body and a particular flavor.
