The Sugoli of Verona

With grapes it’s possible to make not only wine, but also exquisite desserts.
Today, in fact, we will talk about a new recipe, from the ancient Venetian tradition: the Sugoli.

In the past, the harvest was considered a feast for the whole family: after months spent treating the vines and picking up the juiciest bunches, every house in the Veronese countrysides gave off an irresistible scent of grapes, coming from the fresh grape must with which the sugoli came and are prepared.

The ingredients we need are:
- 100 grams of black grapes
- 100 grams of sugar
- 70 grams of flour
-120 grams of water (optional)

Remove and wash the grapes, put them in a pan and cook for 2-3 minutes. Then, add the water and let it cook for another 15 minutes.
After cooking the grapes, we pass it with a masher.
We add – slowly - to sugar and flour the liquid that has been formed and mix carefully, so that no lumps are created. Then, let cook for about ten minutes - on low heat - mixing occasionally.
Once the cream is obtained, we put it in some containers, let it cool and keep it in the fridge for a few hours.
Remember that we can keep the jars in the fridge for 4-5 days. If you notice a light layer of mildew, just remove it and - trust me - you will look even better!
